Using your fingers, gently press the dough into the desired shape and cover with cling film. Leave to rest at room temperature for two to four hours - if you are in a hurry, 30 minutes is fine too. Preparation Drizzle the focaccia with olive oil again and gently press it into the desired shape with your fingers, creating small pits. Sprinkle with coarse salt, chopped thyme and cherry tomatoes. Preparation Take the pizza dough out of the fridge, dust with flour and turn out of the packaging. Shape the dough into a ball, cover with cling film and leave to stand at room temperature for two hours - if you're in a hurry, 30 minutes is fine too. Spread a generous amount of flour on the work surface and carefully flatten the dough ball from the center outwards with your hand, without crushing the edges. Keep turning the dough flatbreadand work it evenly on both sides. Once it is as big as your baking tray, carefully place the dough on the tray lined with baking paper. Now you can add whatever toppings you like!For a margherita: Spread the tomato sauce evenly over the dough with a spoon. Top with mozzarella and bake the pizza in the upper third of the preheated oven for approx. 10-12 minutes at 250°C top and bottom heat. When the crust has a nice golden brown color, finish baking in the lower third until the base is as crispy as you like it. Finally, top the pizza with fresh basil and enjoy! What you need 1 x VITO pizza dough (550 g) approx. 150 g tomato sauce 1-2 balls of mozzarella some basil Resting time two hours Baking time approx. 10-12 minutes Temperature 250°C (top &amp; bottom heat)

PAN-FRIED FLATBREAD

Preparation Take the pizza dough out of the fridge, dust with flour and turn out of the packaging. Dust with flour again and pull into an oblong shape. Place the dough on a baking tray lined with baking paper and cover with cling film. Leave to rest at room temperature for two hours - if you are in a hurry, 30 minutes is fine too. Just before baking, dust the dough with flour again, stretch it out a little and twist it into a spiral three or four times. Bake in an oven preheated to 230°C top and bottom heat for approx. 30 minutes. What you need 1 x VITO pizza dough (550 g) Resting time two hours Baking time approx. 30 minutes Temperature 230°C (top &amp; bottom heat)

CINNAMON FOCACCIA

Preparation Take the pizza dough out of the fridge, dust with flour and turn out of the packaging. Divide into four equal parts, dust with flour and shape into balls. Flatten the balls into flat cakes approx. 1 cm thick, cover with cling film and leave to rest for 30 to 60 minutes. Just before eating, preheat a large, shallow pan on the stove. It should be very hot, but not yet smoking. Flatten the patties again until they are approx. 5 mm thick. Tap off the excess flour and place the flatbreads in the hot pan without the oil. Bake in the pan until bubbles form on the “raw” surface and the underside is golden brown. Turn over and bake on the other side until golden brown. Best enjoyed while still warm! Extra Our tip - goes perfectly with curries, hummus or for your next barbecue. Setup Focaccia - Place baking paper on a baking tray and brush with rapeseed oil. Remove the pizza dough from the fridge, drizzle with rapeseed oil and turn out onto the baking tray. Use your fingers to gently press the dough into a flatbread and cover with cling film. Leave to rest at room temperature for about two to four hours - if you're in a hurry, 30 minutes is fine too. Cinnamon mixture - Melt the butter and mix with all the remaining ingredients for the cinnamon mixture in a bowl. Frosting &amp; topping - Mix all the ingredients together in a bowl. Toast the almond slivers in a pan without fat until golden brown. Preparation Just before baking, spread the cinnamon mixture over the focaccia and press it evenly into the focaccia with your fingers to create small pits. Bake in an oven preheated to 230°C top and bottom heat for approx. 15 minutes. Once baked, drizzle with almond-orange frosting and sprinkle with the toasted almond slivers. Preparation Pack the pizza dough in its packaging in your hiking rucksack. Because the dough gets moist in warm weather and will stick to your fingers, make sure you take flour with you - trust us! As soon as the fire is lit, find the right snake bread stick and remove the bark from the tip with your pocket knife. Sprinkle a handful of dough with flour, shape it into a long snake and wrap it around the stick. Hold it about 20 cm away from the fire and wait patiently until your bread is ready! Pizza Sospesa

Eiskalt gefroren und heiss auf deinen Ofen!

Backempfehlung Pizza aus dem Tiefkühler nehmen und auspacken. Für15 Minuten auftauen lassen, während der Ofen auf 220°C Ober- und Unterhitze vorheizt (aus das Backblech!). Auf der untersten Schiene gemäss Angabe auf der Verpackung backen, oder eben so lange bis sie so knusprig ist wie deine Träume.

Die beste Qualität erhält man in den ersten drei Monaten, also innerhalb des auf der Verpackung festgehaltenen Datums. Wie lange ist die Pizza haltbar?

1. Am Knusprigsten wird die Pizza, wenn man sie auf einem Pizzastein bäckt, den man mit dem Ofen zusammen vorgeheizt hat. 2. Wenn möglich, kann beim Ofen auch ohne Pizzastein die Unterhitze etwas höher gestellt werden, damit die Pizza noch etwas knuspriger wird. 3. Falls die Unterhitze nicht separat gesteuert werden kann und kein Pizzastein vorhanden ist, lohnt es sich, die Pizza auf dem vorgeheizten Blech im untersten Drittel des Ofens zu backen, damit sie etwas mehr Unterhitze im Vergleich zur Oberhitze abbekommt.

Where is the dough available?

The VITO pizza flour is freshly milled on a weekly basis at Knecht Mühle in Leibstatt. From there it is delivered straight to our VITO production site in Münchenstein. The recipe of the flour was developed in a customized process between Knecht Mühle and VITO. The flour is Swiss and is a certified IP-Suisse product. Apart from durum wheat the mixture contains some spelt and wholemeal flour, which makes the dough even more tasty, more easy to digest and also simply healthier. You can find more information about Knecht Mühle by visiting <a href="http://knechtmuehle.ch/">knechtmuehle.ch</a>

Where is our flour from?

The dough is produced daily in our VITO production site in Münchenstein. After a maturation phase of 48h it is delivered to all our restaurants, where the maturation process continues for another 24h.  The dough is only processed into our pizzas after a total of 72h of maturation. This maturation leads to the taste profile and the better digestibility of the dough, that we require from our product. The dough that is available at Migros goes through the same maturation procedure. The dough which you find in Migros is exactly the same one which you can enjoy in our restaurants. The dough is ready to bake once you have it at home, however it can be stored in your fridge up to the expiration date that is printed on the packaging.

Where is the dough being produced?

Why? The dough has a slightly higher water content (higher hydration), which makes it a bit easier to stretch it since it is not too elastic (it doesn’t pull itself back to center as strongly when processing it). That higher water content makes the dough lighter, fluffier and easier to digest, but also slightly more sticky. How to handle it? Flour, flour, flour. Prepare some flour on the surface you want to handle your dough on. Gently rotate the dough before and after the pre-processing rising time of approximately 2 hours in flour or in a mixture of flour and if available durum wheat. Here you can barely exaggerate with using flour. However, what’s important is to brush it off the dough gently before you position the stretched dough on the baking tray.

The dough is sticky?

Our dough is a natural product. Since we do not use any yeast stopper, the dough continues to rise further and further as time goes on. If it ever spills over its container, a friendly fist bump suffices to remind the dough to remain in its territory: its container.

The dough is spilling over its container?

Yes! You can do so without any concern. You best let it thaw overnight in your fridge. The dough might lose a bit of stretchiness and might not rise as much as in its original state, but it will still make very delicious pizzas.

Can I freeze the dough?

The VITO pizza dough contains small parts of wheat peel particles, because it also contains small amounts of wholemeal flour and spelt flour – this is rarely contained in more processed, more industrial products. These are parts of the peel that shields the wheat kernel. These parts are usually sieved out for products available in retail. These particles can oxidize when in touch with oxygen and change color lightly. The resulting small dark dots are not a sign of the dough being of bad quality, but are testimony of its freshness and the contained fibres.

Repeat the process until the dough flatbread has reached the desired size and thickness, with the dough being thicker at the edges.Carefully place the dough on the baking tray lined with baking paper and spread out.4.  Now top as you wish.For a margherita in VITO style: First pour the tomato sauce onto the dough and spread it evenly using a spoon. Sprinkle the grated mozzarella evenly over the tomato sauce, then tear the fior di latte by hand and spread evenly over the pizza. Trim the pizza one last time and shape it.5.  Bake the pizza in an oven preheated to approx. 250°C top and bottom heat for approx. 10-12 minutes. Place the baking tray in the top third of the oven at the beginning. When the crust has a nice golden brown colour after approx. 8-10 minutes, finish baking in the lower third. Finally, top the pizza with fresh basil - and then just enjoy!
